We’re Expanding: Razzoo’s is Coming to Oklahoma City!

This just in: Razzoo’s is expanding yet again, and this time, we’re going out of the state of Texas!

Oklahomans…get excited because a Razzoo’s Cajun Café is coming to Oklahoma City, OK in the Summer of 2019!

Razzoo’s Oklahoma City – Opening Summer 2019

This is a very exciting expansion for Razzoo’s, as it’s our first out-of-state expansion since 2001. With 21 locations across Texas and one of those in North Carolina, we feel that Oklahoma City, OK is the perfect fit for our next location. The restaurant is slated to break ground in February, adding a new Cajun dining option to The Pointe at Chisholm Creek, located at the intersection of West Memorial and Pawnee Drive in Oklahoma City, OK.

One of the things we are most excited about at the restaurant is that it will have a massive outdoor patio, perfect for a night out with friends, a family celebration, or an opportunity to watch the big game. In total, the restaurant will seat about 280 people in its 7,400 square feet building and will bring 100 new jobs to Oklahoma City.

We’re excited to bring our brand of Cajun food to the fine folks of Oklahoma! What you can expect is Southern comfort food that’s fresh…with no frills. We aren’t really into frills. We’re just into good food you can sink your teeth into. Our Southern hospitality, paired with great home cooked meals like gumbo, etoufee, fried catfish, and jambalaya, make a great meal no matter when you choose to join us. We’ll be open for lunch, dinner, happy hour, and late night.

Gator Tail

Oh boy – the most ordered item on the menu (okay besides the rat toes) is our gator tail, and if you’ve never tried it, then you’re definitely missing out! Get it grilled or fried. The fried is served with fries and our “ouch” sauce; the grilled is served over a bed of jambalaya with “ouch” sauce. Either way – you’re in for a Cajun treat.

Andouille Sliders

This is a newer menu item, and one that has quickly grown in popularity! You can order them as an appetizer to whet your palette for a big bowl of gumbo or something – or eat them as a meal. The sliders are made in French baguette, each stuffed with andouille sausage basted in BBQ sauce and fresh slaw. Add a pile of potato chips on the side and your meal is complete.

Gator Punch

Can we shift gears and talk about drinks for a minute?! Our Cajun favorites go beyond the food, as we’ve got a slew of great Cajun style cocktails, including our Hurrycane on the Rocks and the famous Razzoo’s Gator Punch. Trash can drinks never looked – or tasted! – so good with each fish bowl glass (get it for 4 or 2) adorned in classy Mardi Gras beads and then loaded with our favorite liquor.


Gumbeaux – or gumbo as most call it – is a Cajun staple and one we take pride in here at Razzoo’s Cajun Café. There is no right or wrong way to make gumbo (although many argue that there is), so we offer two of the most popular ways to prepare it: with seafood or with chicken and Andouille sausage. Both are excellent choices for a brisk Fall day in North Texas!

We still can’t believe it, but there are some people out there who just don’t get their taste buds in a tizzy over the thought of delicious, deep fried Cajun goodness. We don’t know many of ‘em, but we occasionally have folks dine with us who want non-Cajun food and that’s okay! You’re welcome here too! Here are a few non-Cajun options you are sure to love:


Now we’re speaking your language, right? The quintessential food of the American diet, our cheeseburgers are pretty darn tasty. Enjoy the Big Easy Cheeseburger, which is a half pound burger topped with crispy bacon, cheese, lettuce, onion, and tomato, all served on a buttery toasted bun. Or try our new cheeseburger: the Pimento Cheeseburger. This delicious burger has our own pimento cheese and crispy fried onions. Yum!

Honeysuckle Ribs

Tasty ribs with meat that just falls off the bones…who can resist?! Our mouthwatering ribs are first slow cooked, then grilled for the perfect barbecue flavor. Served with French fries, moonshine apples, and garlic toast, these melt-in-your-mouth ribs are hard to beat.


If you’re looking for something lighter on calories and more green in color, then give one of our salads a try. They get rave reviews among salad lovers for being loaded with flavor. Our chopped salad has bacon, cheese, eggs, tomatoes, cucumbers, fried onions, crispy greens, and the chef might even throw in a few surprises! Our Caesar salad is your classic Caesar salad, and you can get it with blackened chicken or shrimp to spice it up.

Chicky Dipper Basket

A classic, you just can’t go wrong with traditional chicken strips. But you won’t find run-of-the-mill chicken strips here, no sir! Ours are hand cut and hand breaded, then fried to perfection. Served with your choice of slaw or corn, French fries, and our house honey mustard sauce.

History of Gumbo

Ever wonder where gumbo began? Yeah – we all know it came from Louisiana – but it appears it’s really a melting pot dish who’s origins are murky. The earliest reference to the word “gumbo” dates back to 1803 when it was served at a New Orleans political event. As with many dishes in Louisiana at the time, it was made with French, African, Spanish, and Indian influences. In fact, the word “gumbo” is actually derived from a West African name for “okra.” (This is interesting since there seems to be an ongoing debate on whether gumbo should be made with or without okra.) Those that don’t use okra in their gumbo, generally use another spice – filé – which is commonly used in Choctaw and other Indian dishes. And the “roux” used in gumbo – that comes from a French influence. There are as many variations of gumbo as there are crawfish in the bayou – and we think they are all pretty great.

Bringing the Heat: 3 Fun Facts About Tabasco Sauce

When it comes to Cajun food at Razzoo’s Cajun Cafe, Tabasco is one of those condiments our guests just can’t live without! It’s a household staple, but did you know there’s quite a storied past for this hot little number? Impress your friends with these fun facts about tabasco sauce, courtesy of your friends at Razzoo’s Cajun Café!

1. Tabasco Pepper Seeds are Stored in a Vault

Thinking about growing your own Tabasco peppers and making your own sauce? Think again. The McIlhenny family (the family who founded the Tabasco company in the first place) owns Avery Island, a small island just west of New Orleans where all of the prize peppers are grown. Once harvested, the heirloom pepper seeds are stored away in a vault to keep them safe and secure.

2. Tabasco Labels are Printed in 22 Different Languages

In 1868, Tabasco hit the shelves as a high end condiment worth having in every kitchen in America. It started in the South and quickly spread throughout the United States, with the help of the armed forces who gave it to soldiers in the Vietnam War and began serving it in MREs. Today, the delicious flavors of Tabasco can be found in 185 countries with labels printed in 22 different languages! Even the Queen of England has Tabasco on her table.

3. Three Ingredients – Never More, Never Less

The recipe for Tabasco sauce hasn’t changed one bit in its 150 years of existence. Tabasco sauce has simply three ingredients: Tabasco peppers, salt, and vinegar. The flavor is all in those prize peppers and it doesn’t need any fancying up to make it delicious.

Boudin vs. Andouille: Which Cajun Sausage is Better?

Do you ever visit your favorite Cajun food restaurant – Razzoo’s Cajun Café of course – take one look at the menu, and go “what the heck is that?!”

We’re got some “funny” names on the menu, and that’s simply because Cajuns have a language all their own and many Cajun ingredients just sound funny. Sound funny…but taste awesome!

For example, you might notice that we’ve got two types of Cajun sausage listed in various dishes across the menu: Boudin and Andouille. Not sure what either one is? Want to know which is better? Read on as Razzoo’s Cajun Café explains:


Boudin is one of those staples of Cajun cooking. Just take a drive through the Cajun country of Louisiana and you’ll see many a gas station offering hot boudin! Boudin dates back to the 1800s when French and Spanish settlers were moving into Louisiana. Times were hard, people were hungry, and they did everything they could to stretch the meat they had. So, when they made sausage, they started adding rice as a filler to make it go further. Boudin is made a variety of ways, but each is made of a combination of meat, rice, and spices.


Andouille sausage is the “high brow” counterpart to boudin. Andouille became popular as French settlers came over and began settling the cities of Louisiana. These city folk began making Andouille with pork, spices, garlic, onion, and wine and using it in their Creole cooking. Each batch is smoked twice to really draw out the flavors and spices in each bite.

Cookin’ Up Cajun: How to Make the Best Gumbo

Football season is here, and pretty soon (we’re hoping really soon!), the days will begin to cool down. Football + cooler fall weather puts us in the mood for some Cajun comfort food!

One of our favorites is without a doubt Cajun gumbo, and Razzoo’s Cajun Café is here with a few secrets on how to make the best gumbo at home:

Invest in Cast Iron.

If you’re going to make the best gumbo, then you’re going to need a high-quality, cast iron Dutch oven. Cast iron heats up fast and maintains consistent temperatures, making it perfect for even sautéing and simmering.

It All Starts with the Roux.

All good gumbo recipes start with a stellar roux. If yours doesn’t, then it ain’t gonna be good. Follow the directions based on your recipe, but roux is essentially a mixture of flour and fat that has been cooked to golden brown perfection. It might not sound like much, but roux is the key to a thick gumbo with tons of flavor.

Don’t Ever Leave out the Cajun Holy Trinity.

Seriously – if you get nothing else from this post, remember the importance of the Cajun Holy Trinity: bell peppers, celery, and onion. This combination of Cajun deliciousness is what adds authentic flavor to gumbo, and without it, it just ain’t gumbo.

Choose Your Favorite Meat.

Some people will tell you it has to be seafood gumbo; others prefer chicken and sausage. Really – it’s whatever you like! Search the fridge. Got some leftovers? Throw them in! If you get the flavors right, the meat will taste great – no matter what combination of seafood, chicken, or sausage you choose.  

Finish with Cajun Seasonings.

Buy the pre-made Cajun seasoning mix or make your own from a combination of celery, garlic powder, onion, cayenne pepper, oregano, basil, etc. – but by all means – make sure you add Cajun seasonings to give it that authentic Cajun gumbo flavor you crave.
