What the Heck is Boudin, Anyway?!

If you have any knowledge of classic Cajun cuisine, then you’ve heard of the fabled – and famously delicious – boudin sausage. We’ve had our fair share of first-timers visit Razzoo’s Cajun Café and skeptically ask, “what the heck is boudin?!,” so we are here to set the record straight on this staple of Cajun cooking.


It all started with the boucheries.


Boucheries date back to a time when refrigeration was non-existent and Cajuns cooked up every ounce of meat before it went bad. A Cajun cookout of epic proportions, a boucherie was an all day party where the entire hog was cooked over an open fire and every last ounce of meat was used up in some form or fashion. The result: delicious boudin sausage.


No, it’s not just pork.


Early Cajuns blended all of their favorites and created greatness. Boudin goes beyond just the pork. Sure, the pork is the highlight, but boudin wouldn’t be boudin without the perfect blend of pork, rice, onions, and Cajun seasoning, all enclosed in a natural casing. Boudin can be served grilled, boiled, fried, or smoked – all are delicious.

Each establishment has their own specialty blend, and here at Razzoo’s, we tend to think ours is the best boudin around.

In fact, we couldn't find anything we liked from the typical sausage distributors, so we searched high and low until we found one worthy of putting our name on. We found the winner in amazing boudin from Poche's Specialty Meats in Breaux Bridge, LA. Our menu is laced with their boudin sausage goodness, but here are a few suggestions to get you started:


·      Boudin Balls: One of our most popular appetizers, and for good reason! Chow down on boudin balls, battered and fried to crispy perfection. You will not be disappointed!

·      Boudin Stuffed Chicken: Chicken breast served over delicious boudin sausage, it’s a match made in Cajun heaven. Accompanied by veggies and potato mashers, you’ll be rolling out of the restaurant.

·      Traditional Boudin: There’s nothing wrong with sticking to the original. Linked boudin sausage served over Cajun dirty rice.
