Boudin vs. Andouille: Which Cajun Sausage is Better?

Do you ever visit your favorite Cajun food restaurant – Razzoo’s Cajun Café of course – take one look at the menu, and go “what the heck is that?!”

We’re got some “funny” names on the menu, and that’s simply because Cajuns have a language all their own and many Cajun ingredients just sound funny. Sound funny…but taste awesome!

For example, you might notice that we’ve got two types of Cajun sausage listed in various dishes across the menu: Boudin and Andouille. Not sure what either one is? Want to know which is better? Read on as Razzoo’s Cajun Café explains:

Boudin

Boudin is one of those staples of Cajun cooking. Just take a drive through the Cajun country of Louisiana and you’ll see many a gas station offering hot boudin! Boudin dates back to the 1800s when French and Spanish settlers were moving into Louisiana. Times were hard, people were hungry, and they did everything they could to stretch the meat they had. So, when they made sausage, they started adding rice as a filler to make it go further. Boudin is made a variety of ways, but each is made of a combination of meat, rice, and spices.

Andouille

Andouille sausage is the “high brow” counterpart to boudin. Andouille became popular as French settlers came over and began settling the cities of Louisiana. These city folk began making Andouille with pork, spices, garlic, onion, and wine and using it in their Creole cooking. Each batch is smoked twice to really draw out the flavors and spices in each bite.

Po’Boys & Burgers – The Sandwiches of Razzoo’s!

Razzoo’s isn’t really known as a sandwich shop.

 

And we’ll be the first to admit…we don’t do traditional “sandwiches.” What we do have are some pretty darn amazing New Orleans style po’boys and even burgers! Read on to learn more about Cajun po’boys and more:

 

Cajun Po’Boys

 

What were once served to the “poor boys” on the streets of New Orleans (yes, that’s how they got their name) are now a house staple to the guests here at Razzoo’s Cajun Café! There’s nothing like sinking your teeth into that crusty French bread and savoring the flavors of fried seafood inside. At Razzoo’s, you’ll find our traditional po’boys can be ordered 4 ways: with fried popcorn shrimp, fried catfish, blackened tilapia, or blackened chicken breast. Each sandwich comes loaded with lettuce, tomato, pickles, onion, and our house sauce, plus you’ll get some fresh jalapeno pups and French fries on the side! And we use a crusty French baguette that is the perfect balance of crunch on the outside, and spongy soft bread on the inside.

Burgers

 

For the mighty few who just have to order a burger in our Cajun restaurant, we’ve got you covered! Try the Big Easy Cheeseburger which is a half pound patty on a buttery, toasted bun, served with all the trimmings including bacon, cheese, and our homemade smoky sauce. Looking for something more adventurous? Then give the Pimento Cheeseburger a try! This tasty burger is slathered in our pimento cheese, then served with bacon – because what burger isn’t better with bacon? You’ll also get some pretty delicious fried onions on the side as a garnish – score!

The History of Sundance Square

You ever wonder how Sundance Square got its name? Today, we know it as one of Fort Worth’s entertainment districts, full of food and fun for the whole family, but back in the early 1900s, it was the epicenter of Fort Worth’s darker side. Sundance Square was named for Butch Cassidy’s right-hand man, Harry Longabaugh, otherwise known as the Sundance Kid. Butch Cassidy and his crew were well-known bank robbers, and they came to Fort Worth for gambling, drinking, and the like. So the next time you’re in Sundance Square, you can remember its ties to the Old West.

 

New Year, New Menu!

Razzoo’s Sundance Square is proud to announce some new menu items for 2018! Don’t you worry, there will still be plenty of fried fish and crawfish to go around, but we wanted to add a few new things that are sure to become favorites:

Poll: Cajun Fried Chicken or Cajun Fried Steak?!

So here’s a tough one for our Razzoo’s regulars: do you prefer our Cajun fried chicken or our Cajun fried steak?

We’ll be the first to admit, it’s a tough decision, because there are a ton of similarities:

·      Cajun Fried Goodness: Both are Cajun fried – which just means we use our own specialty blend of spices in the batter to give traditional Chicken Fried Steak that perfect Cajun twist. Let’s just say our version is a Southern staple just kicked up a notch.

·      Sausage Gravy – Cajun Style: Both are served with amazing Andouille sausage cream gravy for sloshing your meat around in. It’s spicy and oh so good on just about anything.

·      Southern Sides Mama Would Be Proud to Serve: Both come with red-skin mashed taters and veggie de’jour – which just means whatever veggie of the day Razzoo’s is cooking up that day. Could be green beans, corn, okra, or the like.

·      The Price is Right: Both of these amazing Cajun dishes can be had for just under $12! And with the amount of food piled high on that plate…it’s a steal of a deal!
