Why Do Cajuns Eat Red Beans & Rice on Mondays?

If you’re a true Cajun, then you probably know that for years, Red Beans & Rice was the traditional dinner of Cajuns across southern Louisiana on Monday nights. Maybe your dear ole Granny still serves in on Mondays and you’ve never had a clue why. Why Monday? Why not Wednesday? Was Friday not good enough? Let us fill you in on a little bit of Cajun history on our beloved Cajun side:

Why is Monday Red Beans & Rice Day?

Women of old were very rhythmic with their weekly schedules. In the late 1800s and even early 1900s, their role was to keep house and cook. Typically, this meant Mondays were laundry day. Laundry was a time consuming task (can you imagine doing a week’s worth of laundry by hand without a washing machine?), leaving little room for cooking a huge dinner, so dinner needed to be easy, yet satisfying.

Enter the kidney bean.

Kidney beans arrived in southern Louisiana with Haitian refugees in the early 1800s and made a perfect Monday night meal because they were easy to slow cook for hours with little supervision. Traditionally, Cajun women would slow cook the beans with the “Cajun trinity” of onions, peppers, and celery, whatever meat was leftover from their Sunday meal the day before, and any other assorted Cajun spices they felt like throwing in. The beans were typically served over a bed of hot white rice, completing the perfect Cajun comfort food.

Boudin vs. Andouille: Which Cajun Sausage is Better?

Do you ever visit your favorite Cajun food restaurant – Razzoo’s Cajun Café of course – take one look at the menu, and go “what the heck is that?!”

We’re got some “funny” names on the menu, and that’s simply because Cajuns have a language all their own and many Cajun ingredients just sound funny. Sound funny…but taste awesome!

For example, you might notice that we’ve got two types of Cajun sausage listed in various dishes across the menu: Boudin and Andouille. Not sure what either one is? Want to know which is better? Read on as Razzoo’s Cajun Café explains:

Boudin

Boudin is one of those staples of Cajun cooking. Just take a drive through the Cajun country of Louisiana and you’ll see many a gas station offering hot boudin! Boudin dates back to the 1800s when French and Spanish settlers were moving into Louisiana. Times were hard, people were hungry, and they did everything they could to stretch the meat they had. So, when they made sausage, they started adding rice as a filler to make it go further. Boudin is made a variety of ways, but each is made of a combination of meat, rice, and spices.

Andouille

Andouille sausage is the “high brow” counterpart to boudin. Andouille became popular as French settlers came over and began settling the cities of Louisiana. These city folk began making Andouille with pork, spices, garlic, onion, and wine and using it in their Creole cooking. Each batch is smoked twice to really draw out the flavors and spices in each bite.

Yessir – this one is one of our favorites! Our etoufee is slowly simmered with a dark roux that brings out the richness of the flavors, then served over our famous dirty rice. The hardest part is choosing whether you want to add chicken, shrimp, or crawfish to your dish!

 

Cajun Gumbo

We’d never make it as a Cajun restaurant if we didn’t make a killer gumbo! Ours is chock full of goodness with your choice of seafood or sausage and chicken, along with rice, okra, and other veggies that has been slow cooked longer than a tax refund check.

 

Cajun Fried Chicken

Our Cajun Fried Chicken is extremely popular, with crispy deep fried goodness served over a bed of fluffy mashed potatoes and drenched in Andouille sausage gravy. It is also served with veggies on the side, but who has room to “eat their greens” when the chicken is this good?! P.S. it’s a generous helping, so come hungry!

How to Eat Boiled Cajun Crawfish

It’s crawfish season, and Razzoo’s Cajun Café has the best crawfish in Texas!

We’ve learned over the years that some Texans who are new to eating crawfish find it a little daunting. Don’t you worry! Razzoo’s is here with step-by-step instructions to make Cajun crawfish eating easy as pie.

Step 1: Order Cajun Crawfish in Texas at Razzoo’s!

Head on over to your local Razzoo’s and order a giant helping of Cajun crawfish, shipped fresh from the Gulf of Mexico. It’s just $8.49/lb. and comes with boiled corn on the cob and boiled potatoes.

Step 2: Twist and Pull

PIck up a nice, big crawfish to start with; now hold the tail in one hand and the head in the other hand. With a firm grip on the head of the crawfish, gently twist the tail until it pops apart. Want to do like the true Cajuns do? Now suck the head! If you’re a little too squeamish for that, then just discard it. We won’t hold it against ya.

Step 3: Remove the Tail Meat

Now on to the good stuff! Peel off the first few rings (maybe 2 or 3) of the tail so that part of the tail meat is exposed. With one hand, pinch the end of the tail, and this should release the tail meat. Now all you have to do is gently pull it out and eat!

Step 4: Eat your Weight in Cajun Crawfish!

Razzoo’s prides itself on offering the freshest, tastiest crawfish around! Each order comes complete with butter for dipping (this is a must!), boiled potatoes, and boiled corn on the cob.
