Gator Tail


Oh boy – the most ordered item on the menu (okay besides the rat toes) is our gator tail, and if you’ve never tried it, then you’re definitely missing out! Get it grilled or fried. The fried is served with fries and our “ouch” sauce; the grilled is served over a bed of jambalaya with “ouch” sauce. Either way – you’re in for a Cajun treat.



Andouille Sliders


This is a newer menu item, and one that has quickly grown in popularity! You can order them as an appetizer to whet your palette for a big bowl of gumbo or something – or eat them as a meal. The sliders are made in French baguette, each stuffed with andouille sausage basted in BBQ sauce and fresh slaw. Add a pile of potato chips on the side and your meal is complete.

Gator Punch


Can we shift gears and talk about drinks for a minute?! Our Cajun favorites go beyond the food, as we’ve got a slew of great Cajun style cocktails, including our Hurrycane on the Rocks and the famous Razzoo’s Gator Punch. Trash can drinks never looked – or tasted! – so good with each fish bowl glass (get it for 4 or 2) adorned in classy Mardi Gras beads and then loaded with our favorite liquor.



Gumbeaux


Gumbeaux – or gumbo as most call it – is a Cajun staple and one we take pride in here at Razzoo’s Cajun Café. There is no right or wrong way to make gumbo (although many argue that there is), so we offer two of the most popular ways to prepare it: with seafood or with chicken and Andouille sausage. Both are excellent choices for a brisk Fall day in North Texas!

History of Gumbo

Ever wonder where gumbo began? Yeah – we all know it came from Louisiana – but it appears it’s really a melting pot dish who’s origins are murky. The earliest reference to the word “gumbo” dates back to 1803 when it was served at a New Orleans political event. As with many dishes in Louisiana at the time, it was made with French, African, Spanish, and Indian influences. In fact, the word “gumbo” is actually derived from a West African name for “okra.” (This is interesting since there seems to be an ongoing debate on whether gumbo should be made with or without okra.) Those that don’t use okra in their gumbo, generally use another spice – filé – which is commonly used in Choctaw and other Indian dishes. And the “roux” used in gumbo – that comes from a French influence. There are as many variations of gumbo as there are crawfish in the bayou – and we think they are all pretty great.

Storms A’Brewin! – Tall Tales of the Hurricane Cocktail

“Storms a’brewin!”

 

More than just a description of the weather, back in the old days that phrase got you a FREE drink! Read on to learn more about the storied beginnings of one of our favorite cocktails here at Razzoo’s – the hurricane (or Hurrycane as we call it!):

 

The year was 1940, and in those days, Prohibition was a very real thing. Business owner Pat O’Brien opened a speakeasy in New Orleans, the perfect stop for sailors along their travels. If they wanted to get into the speakeasy, the phase was simple: “storms a’brewin.”

 

Once inside, sailors could order a variety of drinks, but one was free  - the hurricane. You see, getting quality liquor was difficult and the liquor suppliers knew it. In order to get even just a little bit of the good stuff, they made business owners order a ton of the cheap stuff. Well, Mr. O’Brien found himself with a heap of cheap rum and nothing ot use it for, so he came up with a plan. Why not mix it up with some fruit juice, then serve it to sailors for free as a gimmick to get them into his bar vs. others! The trick worked, but the joke’s on O’Brien because not only did they drink it – they liked it! The hurricane as we know it today was born.

 

The drink is still widely popular in New Orleans, and if you’re there, you’ll most likely see people carrying it around in plastic cups because carrying around glass cups are prohibited.

 

If you visit us at Razzoo’s Cajun Café, we can pretty much guarantee the best hurricane in Texas or North Carolina! It’s affectionately known as the Hurrycane on the Rocks, loaded with Bayou Select and Bayou Silver Rum, Don Q 151, grenadine, orange juice, and pineapple juice. It’s 22 oz. of fruit punch heaven, served in a hurricane glass with beads. What’s not to love?

And just in time for our Winey Wednesday promo, we’ve added two more wines to the wine list for summer: Charles & Charles Rose and a Joel Gott Sauvignon Blanc. Summertime Shrimp Fix: How to Make Razzoo’s Shrimp Lettuce Wraps at Home!

Of course, Razzoo’s Cajun Café is known for its delicious fried seafood – smothered in gravy or sauce – but we do have a few lighter things on the menu too! We recently revamped our menu and added a few new items, including the Shrimp Salad Lettuce Wraps that are getting rave reviews! They are pretty perfect as an appetizer or even as a light lunch or dinner.

 

Our very own Andrew Tyler recently spoke with WBTV Charlotte to share a few secrets about our Shrimp Salad Lettuce Wraps and to teach viewers how to make this delicious dish at home. In case you missed it, here’s the recipe:

 

Copycat Razzoo’s Shrimp Salad Lettuce Wraps

 

Ingredients

 

·      Popcorn Shrimp (about a cup)

·      1 cup of mayonnaise

·      1 tsp. Old Bay seasoning

·      2 T. lemon juice

·      1 T. roasted jalapenos

·      2 T. finely chopped celery

·      1 T. finely chopped red onion

·      1 T. finely chopped red bell peppers

·      6 pieces of bib lettuce

·      Cajun seasoning, lemon juice, Tabasco sauce, salt, and pepper to taste

 

Directions

1.  Boil your popcorn shrimp in water with your choice of spices for 2-3 minutes. Do not over boil! We use our own proprietary Swampwater Boil, but flavoring your water with Cajun seasonings, lemon juice, salt, and pepper would be a delicious start!

2.  While the shrimp is boiling, prepare your dressing by combining mayo, Old Bay seasoning, 2 T. lemon juice, a pinch of salt, a pinch of pepper, and a dash of Tabasco sauce in a large bowl.

3.  When shrimp is done cooking, remove it from heat and run it under cold water to prevent it from overcooking.

4.  Place shrimp in a separate bowl from the dressing and add roasted jalapenos, celery, red onion, and red bell peppers.

5.  Add approx. 1 oz. (or one full ice cream scoop equivalent) of the dressing to your shrimp mixture and stir to combine.

6.  Lastly, spoon as much – or as little! – of the shrimp mixture as you want into a piece of lettuce, wrap it up, and go to town! Good eatin’!

We love these lettuce wraps because they are light and easy to eat, yet they still pack that Razzoo’s punch you’ve come to love from our down home, Southern cookin’. Visit a Razzoo’s Cajun restaurant near you or try them at home – either way – we know you’ll love them!

The History of Sundance Square

You ever wonder how Sundance Square got its name? Today, we know it as one of Fort Worth’s entertainment districts, full of food and fun for the whole family, but back in the early 1900s, it was the epicenter of Fort Worth’s darker side. Sundance Square was named for Butch Cassidy’s right-hand man, Harry Longabaugh, otherwise known as the Sundance Kid. Butch Cassidy and his crew were well-known bank robbers, and they came to Fort Worth for gambling, drinking, and the like. So the next time you’re in Sundance Square, you can remember its ties to the Old West.

 

New Year, New Menu!

Razzoo’s Sundance Square is proud to announce some new menu items for 2018! Don’t you worry, there will still be plenty of fried fish and crawfish to go around, but we wanted to add a few new things that are sure to become favorites:
